Rum Balls

Orange-Fennel * Coconut-Lavender * Cayenne Pepper

Nothing is telling Winter Holidays more than a good batch of my signature rum balls. This year, I created a set of new flavors to indulge on.

Ingredients for 100 Orange & Fennel Rum Balls

12 oz semisweet chocolate, 9 oz ground hazelnuts, 1 Tbsp dutch processed unsweetened cocoa powder, zest of 1 orange, 2 tsp ground fennel, 2 tsp freshly brewed espresso, 4 Tbsp spiced rum, 1 stick unsalted butter, 4 oz powdered sugar,  more cocoa powder to cover, fennel seeds to garnish.

Ingredients for 100 White Chocolate Coconut & Lavender Rum Balls

12 oz white chocolate, 9 oz ground almonds, 1 tsp finely ground edible lavender, 2 tsp coconut milk, 4 Tbsp spiced rum, 1 stick unsalted butter, 4 oz powdered sugar, dessicated coconut to cover, lavender to garnish.

Ingredients for 100 Dark Chocolate Cayenne Pepper Rum Balls

12 oz dark chocolate, 9 oz ground hazelnuts, 1 Tbsp dutch processed unsweetened cocoa powder, 2 tsp freshly brewed espresso, 4 Tbsp spiced rum, 1 stick unsalted butter, 4 oz powdered sugar, more cocoa powder to cover, crushed chili flakes to garnish.

How to pull it off

For each flavor, separately melt the chocolate over steam or in the microwave. Add nuts, cocoa, flavors and spices, espresso or milk and rum. Stir well to combine. In a food processor, pulse sugar and butter until combined but still crumbly. Add sugared butter to chocolate-nut mixture and stir well to combine until you have a smooth and even mixture. Cover and refrigerate for about an hour. Prepare small candy cups and cookie tins for storage. Pour cocoa powder and dessicated coconut on dinner plates. With a teaspoon, portion one rum ball and form small balls with your hands. Toss with cocoa or coconut to cover. Drop one rum ball in each candy cup and garnish with fennel seeds, lavender or the red part of crushed red pepper flakes. Store in an airtight container such as a cookie tin and keep refrigerated – you can store them for up to a month, after that they will get dryer and lose the nice rum flavor. Enjoy them right out of the fridge.
