Guinness Cupcakes with Boozy Frosting

I love boozy desserts! This is my go-to recipe for rich, dark chocolate cupcakes for an adult gathering. PS: for the frosting either use Baileys Irish Cream, Bourbon or Tequila 😉

Guinness Cupcakes with Boozy Frosting

Cupcake Ingredients

  • 1/2 cup Guinness stout
  • 1/2 cup or 1 stick unsalted butter
  • 1/4 cup brown sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1 tsp baking soda
  • 1 large egg
  • 1/3 cup sour cream
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/8 – 1/2 tsp cayenne pepper (to taste)
  • 1 pinch salt

Baileys Frosting Ingredients

  • 1 cup or 2 sticks unsalted butter
  • 2 Tbsp Baileys Irish Cream, Bourbon or Tequila
  • 4 cups powdered sugar


  1. Preheat the oven to 350°F. Line a mini cupcake tin with paper liners.
  2. In a medium saucepan, simmer Guinness, butter and brown sugar until completely melted and smooth. Remove from heat and whisk in cocoa powder until combined. Set aside.
  3. In a mixing bowl, combine flour, granulated sugar, baking soda, a pinch of salt, cayenne pepper and cinnamon. Set aside.
  4. In a separate bowl, combine egg, sour cream and vanilla extract.
  5. Add Guinness mix to the flour mix and combine well. Then add egg mixture.
  6. Pour in prepared cupcake tin and bake about 20 minutes until fragrant and a toothpick inserted in the center comes out clean. Let cool on a rack.
  7. For the frosting, soften butter and mix with the booze of your choice until completely smooth. Add powdered sugar and mix on high speed until airy and fluffy. If the frosting appears too dry, add a splash of liqueur and mix again.
  8. Using a pastry bag or Ziploc bag with one corner cut off, pipe frosting on the cooled cupcakes.
